Pumpkin Spice Jell-O

I found this amazing stuff in the commissary...and I stocked up like its the end of the world! But that also means I've been making all the crazy stuff thats possible with it.
I call it...
PUMPKIN SPICE JELL-O

This treat was really simple. I crumbled ginger snaps on the bottom, poured the jell-o over that and sprinkled the top with more ginger snaps. Fantastic!

I also found "Gingerbread" flavored Jell-O! I made a ginger snap crust (mixing crumbs and butter) then poured gingerbread jell-o, let sit for a little bit. Then pour pumpkin spice jell-o of the top of that and sprinkle a little crumbled ginger snaps on the top. Great with whipped cream too!

This is a "Poke Cake" (if you don't know what that is, google it) I made a Spice-Cake (from a box mix) then let cool completely. Then poke holes in the cake with the end of a wooden spoon.. Pour the pumpkin spice jell-o over it, making sure all the holes are filled. Let it firm and then create a pretty design with cream cheese frosting. This was a HUGE hit at the party we took it too. Not a bite was left!

Flower Icing Cake

I know everyone has seen this on Pinterest. I just HAD to try it out! My grandma had her 80th Birthday party, with a purple theme, so to accompany the sheet cake, I made this pretty flower cake! I just used box cake mix for the inside--alternating vanilla and chocolate layers. The purple icing was also in between the layers as well.

This was quite easy to do, a bit time-consuming, but easy! You gotta try it out...and if you make a mistake, just use a knife and scrape/spread it away! You can't go wrong!

Candy Corn Cupcakes (CCC!)

I made these for a Halloween party I went to this past week....they were such a huge hit!

Guess where I found this idea? YUP. Pinterest. Hi, my name is Carolyn, and I'm addicted to Pinterest.

CANDY CORN CUPCAKES

The ones I saw also had a little bit of white in the batter...but I just kept the white as the icing. They were actually pretty easy, but learned a bit for next time I make them.

What you need:
White/Vanilla Box Cake
Food Coloring
White/Vanilla/Cream Cheese icing

Make the box cake as directed. If you're going to do the little bit of white in the cupcake, reserve about 1 cup of batter in another bowl. For the rest of the batter, put the yellow food coloring in. It takes a lot too! Use a big (icecream) scoop into cup cake pan. When you are finished filling the yellow part, add some red food coloring to the batter enough to make it a good orange color. Then put the orange batter in cupcake pan as well. If you reserved white batter add that on top. Bake according to box directions. Let cool completely and pipe the icing on top. Garnish with a candy corn and you've got the perfect treat!

"Heaven in a Single Bite"

I saw these all over (on Pinterest, of course)....
  
And I just HAD to give these bad boys a try...
...and I named them more "appropriately" as well

Did I mention you don't need to be a novice to make these?? Really, all from a box....

HEAVEN IN A SINGLE BITE


1 box brownie mix (with ingredients called for)
1 tub cream cheese icing
12 pack of Ferrero Rocher chocolates (each one cut in half)
chopped almonds

Make brownie batter and pour into a mini muffin tin. Cook for about 20 minutes, or until toothpick comes out clean. IMMEDIATELY press 1/2 piece of chocolate into the brownie and let cool for 10 minutes. [yields about 24-32 miniature brownies--so get more chocolates, or use the extras in a different recipe]

Carefully remove brownies from the muffin tin, and let cool on wire rack.

When brownies are completely cool, top with s dollop of icing and sprinkle with chopped almonds.

THERE. Heaven on a stick. Now don't eat every.single.one. That defeats the purpose of making them for a lunch group ...

What was I saying? Oh yes...also prepare to spend the night on the tredmil.
