Baked Potato Soup & Tips {linky}

Earlier this year, I made Paula Deen's Baked Potato Soup. It is my FAVORITE soup recipe to date. With the cold weather recently, I decided to make it again. And then I also took it to a potluck for a bible study I'm in. Its always a huge hit. HOWEVER, the hardest thing I have found is actually taking the picture. How do you take a picture of a bowl of soup? For some reason this is a huge challenge for me.

Sure, they have significantly improved since last shot, but still....not where I want to be.

RECIPE:
8 slices hickory smoked bacon
1 onion, diced
1/2 cup flour
(14.5 ounce) cans chicken broth
5 potatoes, baked, peeled and diced
1 teaspoon dried parsley flakes
2 cups half & half
1 cup sharp cheddar cheese, grated
1 cup sour cream
salt & pepper to taste (optional)

In a duth oven, cook bacon until crisp; remove and crumble, reserve drippings.

Cook onion in bacon drippings until tender; stir in flour and cook for one minute, stirring constantly. Gradually add chicken broth; cook, stirring constantly until thickened and bubbly. Put in the diced potatoes, parsley, bacon and half & half; cook for 10 minutes. Stir in cheese and sour cream.

Garnish with cheese, bacon and sour cream.

PMM #1 {{{Hop & linky}}}

**These can be FUN MEALS or INDIVIDUAL dishes to add on the linky! And it doesn't have to be like $3 cheap--just a dish that is fairly inexpensive!**

So this is something I've decided to start on my blog. PENNY-MEAL MONDAY. Don't you even have that night when its the day before pay-day, and there is nothing to cook? I always have these meals on hand in case that happens. I always have the ingredients. And if I don't, I can scrape up money from the couch cushions and get. Hence the name: Penny Meals.

Here is one of my favorites. I have many, so please check back next week for another one! Who knows when you might need it to save the day.

Pasta Roni: (10/$10 sale) = $1.00
Can veggie: $0.75 [corn is just what I had tonight, but any family fav veg will work!]
Polish Kielbasa Sausage: (huge value pack was $6, split into normal portions) = $1.50
TOTAL: $3.25 for a family of 4 (2 adults and 2 children)

How do I make this? 
Pasta: according to directions (5 minutes)
Sausage: Cut in sections, then in half. Spread BBQ sauce over it and cook on grill, or grill pan.
Veggie: Drain, dab with butter and garlic salt and pop into microwave for 2 minutes.
[variations: mac-n-cheese instead of pasta]

Some might think this is retarded, but it has saved me so many times. And my kids gobble this up like their life depends on it.

Calling all Strawberries! **LINKY**

IN NEED OF STRAWBERRY RECIPES!

At the commissary, the strawberries were on for 99 cents a pack--and I got a bunch of packs! But now what do I do?? It would be easy for me to just start googleing or food blog search it...but I thought this would be a great opportunity for my wonderful viewers to get their input!
