Banana Pudding Cupcakes

Made these for my 30th Birthday! Best cupcakes I've ever had! The frosting isn't too pretty, had a big mis-hap with the pastry bag (don't ask). But they still tasted just as good!!

BANANA PUDDING CUPCAKES


Cupcakes:
1 Betty Crocker® FUN da-Middles™ yellow cupcake mix with creamy vanilla filling
3/4 cup water
1/3 cup vegetable oil
2 eggs
1/2 box (3.4-oz size) banana cream instant pudding and pie filling mix
12 vanilla wafer cookies

Frosting:
1 cup butter, softened
4 cups powdered sugar
1/2 box (3.4-oz size) banana cream instant pudding and pie filling mix
3 tblsp heavy whipping cream
1 tblsp vanilla
2 tsp banana extract

Garnish:
1/2 cup crushed nilla wafers
12 whole nilla wafers

  • Make cupcake batter as directed on cupcake mix box, using water, oil, eggs and adding 1/2 box of pudding mix. (Other half of box will be used in frosting.)
  • Before filling paper baking cups as directed on box, place 1 vanilla wafer cookie in bottom of each paper cup. Fill cups as directed on box. Bake and cool cupcakes.
  • Meanwhile, in medium bowl, beat frosting ingredients with electric mixer on medium speed until smooth. Refrigerate until ready to use.
  • Frost cooled cupcakes. Sprinkle tops with nilla wafer crumbs; top each with 1 cookie.

Mint Julep Cupcakes



In honor of the Kentucky Derby today, I'm flash thing back to an amazing event I had...the Tea Party! I made all sort of treats, but the biggest hit was the "Mint Julep Cupcakes" that I made into cake pops.



I got the recipe from "A Latte' with Ott, A" and miniaturized it! I could eat these all day...in fact, I think I'm going to make them again....

I also made these Bourbon Grapes with Goat Chese...WOW!



These are pretty much green grapes soaked in bourbon over night, then roll balls of goat cheese in chopped pecans and put them on a toothpick. Easy, and what a hit!

This is the spread from that day...its really making me want to have another one....uh oh...hahaha

#3 North Pole Cupcakes

NORTH POLE CUPCAKES
(You'll see a lot of my inspiration from Pinterest!)


This isn't really a recipe. I used box cake (gaaaasp! I know!) and "box" icing (gaaaaasp! I know!) that tasted like peppermint. Made the cupcakes according to the direction and frosted them. I sprinkled a little white sugar over top to give it the "sparkly" snow has. Take a peppermint stick (or break candy canes apart, like I did) and then put a little icing on top and top it off with a red M&M.

A few hints:

  • Don't put the peppermint sticks in until you are ready for delivery or to eat--the candy "melts" and will make the snow look more like blood....trust me on this one. You could probably freeze them to prevent bleeding as well, but don't quote me on that.
  • The peppermint icing was AWESOME and gave it more of a unique flavor rather than just plain vanilla.
  • Get a HUGE bag of M&Ms so you can eat all the ones you didn't use!
  • Put in clear plastic cups for a cute shell around it and delivery it without any hiccups!
  • These are PERFECT for bake sales!

Candy Corn Cupcakes (CCC!)

I made these for a Halloween party I went to this past week....they were such a huge hit!

Guess where I found this idea? YUP. Pinterest. Hi, my name is Carolyn, and I'm addicted to Pinterest.

CANDY CORN CUPCAKES

The ones I saw also had a little bit of white in the batter...but I just kept the white as the icing. They were actually pretty easy, but learned a bit for next time I make them.

What you need:
White/Vanilla Box Cake
Food Coloring
White/Vanilla/Cream Cheese icing

Make the box cake as directed. If you're going to do the little bit of white in the cupcake, reserve about 1 cup of batter in another bowl. For the rest of the batter, put the yellow food coloring in. It takes a lot too! Use a big (icecream) scoop into cup cake pan. When you are finished filling the yellow part, add some red food coloring to the batter enough to make it a good orange color. Then put the orange batter in cupcake pan as well. If you reserved white batter add that on top. Bake according to box directions. Let cool completely and pipe the icing on top. Garnish with a candy corn and you've got the perfect treat!

Shark Cupcakes

Last week was VBS [Vacation Bible School] for my kiddos. They had a wonderful time! I helped out in the crafts area and had a lot of fun too. Volunteers were need to bring in snacks and food and such for the volunteers. So I said I'd bring in cupcakes. Yup, another chance to express my creativity! Not to mention they were a huge hit and didn't last but and hour. That is always a great ego booster!

SHARK CUPCAKES


Again, I just used a delicious box cake mix for the cupcakes (yellow butter cake). White frosting with blue food coloring for the frosting "waves." White chocolate and semi-sweet chocolate for the "waves," "sea shell" and "shark fin." And then I used a powdered donuts (use a spoon to make the "bite" mark) for the life preserver and red food gel for the strips. Graham cracker crumbs for the "sand."


Be creative with it! I really enjoyed making these. I'm sure there is a more "professional" way to create these, but I didn't have a lot of time and it was just for fun.



Anyone notice my little detail of the colored paper cups? Blue for the water and yellow for the land! I know, crazy. But thats me!

    "Grate" Gift for Dad

    I was going to wait until Sunday to post this, but I've had so many friends ask me how I made them and wanted more details! So here it is!

    I want to give credit to where I saw this idea, because I didn't think of it on my own. Family Fun, The Cupcake Blog, Polka-Dot Apron ....I have seen it on a few other personal blogs as well. Just trying to give credit to whom it belongs.  

    FATHER'S DAY CUPCAKES
     "Grate Gift for Dad"


    Bake chocolate cupcakes however you like. I use box mix to keep it on the simple side.

    What candy you need:
    Hot Tamales
    Caramel with cream centers
    Orange colors sugar sprinkles
    Mike-n-Ikes

    Other supplies:
    Black frosting
    White frosting (to mix a little with black to make gray frosting)
    Decorating tips and bags
    Knife (to cut candy pieces)
    Toothpicks

    First sprinkle the cupcakes with the orange sugar sprinkles (burning embers!). Then pipe with the gray frosting the grill over the orange sprinkles. I used just a little orange, and as things started to pile up, its not as noticeable. I would use a lot more next time. The rest is up to you.


    Shape the caramel with cream center into meat "shapes"--like a pork chop, or a t-bone, or fillet Mignon...you get the point. Since the caramels where so think, I cut them horizontally so I could get 2 chops from 1. Use the hot tamales for the "hot dogs." Don't forget to put on the "grill marks" using the black frosting and a toothpick.


    These are my favorite little puppies. Kabobs! Use the hot tamales for the "sausage" part, then cut up yellow and green mike-n-ikes for the "pineapple" and "bell peppers" part of the kabob. You can get creative with other things for the kabobs, but I had to use what I could find. Again, add "grill marks" for more detail.


    Be creative on what you put on which cupcakes. Keep a variety to make them each unique!


    I LOVE how they all look together as a group. Makes me smile. And my husband has already snatched one!
