Rhubarb & Mixed Fruit Smoothie

SMOOTHIE MONDAY
RHUBARB & MIXED FRUIT SMOOTHIE


1/2 cup rhubarb, chopped
1 cup frozen mixed fruit
1/2 cup vanilla yogurt
1/8 cup water

  • Place all ingredients into a blender. Process until smooth. (add more water if needed to get to desired consistency)

Pumpkin Pie Latte

Everything pumpkin at this time of the year! I've found some recipes that I couldn't resist...and I'm sharing with you!
SMOOTHIE MONDAY
PUMPKIN PIE LATTE


1 1/2 cups coffee, frozen, partially thawed [don't use bold or extra bold--it will be too bitter]
2 Tbsp. pumpkin, canned
1/2 tsp. vanilla extract
1/4 tsp. pumpkin spice, ground
1 Tbsp sugar
1/2 cup half & half [or use "pumpkin pie spice creamer for an added boost in the flavor!]
  • Mix all the ingredients in a blender and process until smooth.
  • [optional] Top with whipped cream and a dash of cinnamon.

Kiwi Yogurt Smoothie

KIWI YOGURT SMOOTHIE

My kids have been begging me to make a smoothie with kiwi's, so I finally gave in. Kiwi is a delicious fruit, however, it can be really ripe and sweet, or really sour. I usually get a combination, I can really tell the difference until I eat it. So with that, I made a smoothie, then needed to "re-do" it with a little bit of sugar added. I didn't realize how much the sour takes over the sweet.


5-6 fresh kiwis, peeled
1/2 cup yogurt
2 tblsp sugar

  • In a blender, process until smooth. Serves 2 big glasses.

Green Machine Smoothie

SMOOTHIE MONDAY
THE GREEN MACHINE

    

3 cups green grapes, washed and stems removed, frozen
1 cup packed baby spinach
1 granny smith apple, peeled, cored and chopped
1-1/2 cups apple juice

  • In a blender, combine all ingredients and process until smooth. Serves 4.

Over the Rainbow Smoothie

SMOOTHIE MONDAY
OVER THE RAINBOW SMOOTHIE


1-1/2 cups fruit punch
1/3 cup rainbow sherbet
1/2 cup club soda
additional rainbow sherbet for garnish

  • Combine fruit punch and sherbet in blender. Process until smooth. Pour into glasses; add club soda. 
  • Top with additional sherbet!

For the colorful rims on the glasses, wet edges of glasses then turn them upside down and dip them into colorful sprinkles.

Banana Yogurt Shake

SMOOTHIE MONDAY
BANANA YOGURT SHAKE


1-1/2 cups milk
2 ripe bananas, frozen (if not frozen, add a few ice cubes)
1 cup vanilla yogurt
1 tsp vanilla
1/2 tsp ground cinnamon
dash ground nutmeg

  • Combine ingredients in a blender and process until smooth. Makes 4 servings.

Berry Smoothie



1 medium banana
1 can (6oz) Pineapple Juice
1 cup blueberries
1 carton (6 oz) blueberry yogurt
whipped cream (for topping)

  • In a blender, process until smooth. Top with whipped cream and blueberries.

Ok, so the linky site is supposed to be paid for after your trial is over. And I'm too cheap to pay for it. I know, maybe some other time I will. And, of course, this week's "Penny-Meal" isn't really things I have on hand. Its more planned, but very cheap.
GRILLED CATFISH


6 tablespoons lemon juice
1/4 cup butter, melted
2 teaspoons Worcestershire sauce
4 catfish fillets 
1/2 teaspoon salt
1/2 teaspoon lemon-pepper seasoning
1 lemon, sliced into rings

In a large Ziploc, combine lemon juice, butter and Worcestershire sauce. Add the fish; seal a refrigerate for 30 minutes.

Drain and discard marinade. Sprinkle fish with salt and lemon-pepper.

Spray the grill with cooking oil. Grill fish, covered, over medium heat for 4 to 6 minutes on each side, or until fish flakes easily. [Cook with lemon slices on top of fish]


Serve with:
LEMON-PEPPER SQUASH & ZUCCHINI


1 large squash, cut into rings 
2 large zucchinis, cut into rings
1/4 cup butter, melted
1 to 2 teaspoons lemon-pepper seasoning

In a large bowl, toss squash and zucchini in butter and sprinkle lemon-pepper seasoning over top.

Grill, at the same time as fish, for 10 minutes or until soft, with lemon slices [from fish] mixed in.

Serve everything over white rice!

COST: Catfish fillets: $4.75; squash & zucchini: $1.00 (summer sale!); Rice: "free"--whatever in pantry
