Guilty Pleasures: Quick Eggnog Pie

I was given the pleasure to review a wonderful cookbook called "Guilty Pleasures" by Gwen McKee and Barbara Mosely. I was like "ohhh time to bring out the fat pants"! There are so many fantastic recipes ranging from cakes to pies to breakfast sweets and anything in between for any occasion that you might want to have a sweet. Recipes are well written, easy to follow and you know that when you make one of them in the book, that it has been perfected.

I choose an easier recipe to start out. This pie has a very rich flavor, absolutely amazing. However, if you don't like eggnog, you will NOT like this pie. I used rum instead of vanilla flavoring and it added another level of flavor, almost a kick. A small piece was definitely enough!

QUICK EGGNOG PIE


1 envelope unflavored gelatin
3 tblsp cold water
2 cups commercially prepared eggnog
1 cup heavy cream, whipped
1/4 cup sugar
1/4 tsp salt
2 tsp vanilla or rum flavoring [I used rum!]
1 (9-inch) graham cracker pie shell
Nutmeg for garnish
  • Soften gelatin in cold water. 
  • Warm eggnog over direct low heat. Stir in softened gelatin, and continue heating until completely dissolved. Chill until partially set, then beat until smooth.
  • Into stiffly whipped cream, beat sugar, salt and flavoring. 
  • Fold into eggnog mixture. Pour into pie shell. 
  • Chill 2-4 hours. Garnish with nutmeg. Serves 8.

Blackberry Mojitos

My hubby loves making himself regular mojitos fairly often, so ME making a mojito was very intimidating. But I did it anyway. He tried it, turned to me and said he loved it so much more than any mojito he has ever had. *huge grin*

BLACKBERRY MOJITOS





  • 3/4 cups blackberries
  • 5-6 large mint leaves
  • 4 teaspoons sugar 
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh lime juice
  • 1/2 cups seltzer water
  • 1/4 cups white rum (or you can use vodka)
  • ice cubes


  • Muddle blackberries, mint leaves, sugar, lemon and lime juice in a tall glass until berries are mostly crushed.
  • Add seltzer, rum and add ice to reach edge of glass. 
  • Garnish with a blackberry, lime slice and/or mint leaves. Stir and serve!

Banana Foster

A delicious and very simple dessert to serve while grilling out with friends!



1/4 cup butter, melted
1/3 cup brown sugar
2 tblsp rum
4 medium bananas 
Vanilla Icecream

  • Slice bananas into 1/2 inch rings.

  • In a small bowl, combine first 3 ingredients and then mix with banana slices.

  • Create a 3-layer aluminum foil pocket and poor banana contents inside. Seal completely.

  • Grill over medium heat for about 7 minutes. Remove and serve with scoops of icecream.

Peach Blossom Fuzz

PEACH BLOSSOM FUZZ




Ingredients:

  • 1-1/4 cups sliced fresh or frozen peaches [peeled is optional, I didn't peel mine fore the picture]

  • 1/2 medium frozen banana, broken into thirds

  • 1 cup orange juice

  • 1/2 cup crushed ice

  • 1/2 cup fat-free vanilla yogurt

  • 1 tablespoon honey

  • 1/4 teaspoon rum extract [or vanilla extract]


Directions:


  • In a blender, combine all of the ingredients; cover and process for 15-20 seconds or until smooth. Stir is necessary.

  • Pour into chilled glasses; serve immediately.

  • Yields 3 servings [1-1/2 cup equals 186 calories]
